Our bar keeps a deep shelf of aged and single-estate Caribbean rums — bright and grassy, rich and barrel-aged, warm with spice — alongside a list of signature cocktails built around them. The house pour, the SeaRock Rum Punch, blends aged rums with passion fruit, lime, bitters and fresh-grated nutmeg, the way island punch has always been made.

Beyond rum you will find a compact, well-kept cellar of crisp whites and sun-built reds chosen to sit beside the seafood menu, and a genuine list of zero-proof drinks — sorrel, sea-grape and fresh island juices — for anyone stepping back from alcohol. Happy Hour runs every day from 4 to 7pm, timed to the long gold of the George Town sunset, and our bar team is always glad to guide you to the right glass.
