It begins gently. As the sun slips behind the cruise ships and the harbour turns to copper, a band sets up beneath the Reef Mural — congas, a horn line, a singer who knows every room in Latin America. The first cocktails go out, the conch fritters arrive hot, and the evening leans into its groove.
By eight o'clock the floor belongs to the music. Professional dancers from the island's salsa community move between the tables, drawing guests up one by one — and what starts as a quiet dinner becomes the night everyone talks about on the boat home.
It is spirited, yes. But this is still SeaRock: linen on the tables, candlelight on the glasses, and a kitchen sending out heritage plates all evening long. Spirited and elegant, in equal measure.
