Rum is the Caribbean's spirit, and a good island bar treats it with the seriousness it deserves. SeaRock's bar is dark, warm and elegant — backlit bottles, low gold light, a long shelf of rum that runs from easy sippers to aged and rare.

The cocktail list is built around it: island classics done properly, a few signatures of our own, and the fresh juices and spice the Caribbean was made for. Whether you are easing into dinner or settling in for the evening, the bar is the warm heart of the room.

A great bar is part of any proper restaurant, and on a Caribbean island it should know its rum. Here is what to expect from the bar at SeaRock.

A short word on Caribbean rum

Caribbean rum ranges from bright and grassy to deep, aged and almost spiced. The easiest way in is to tell the bar what you usually enjoy in a spirit, and let them pour you something to taste. There is no wrong place to start.

Happy hour, every day

Happy hour runs daily from 4 to 7pm. It is the gentle on-ramp into a Cayman evening — a cocktail as the afternoon cools, the harbour going gold, and dinner still ahead of you if you want it.

The bar before dinner, or instead of it

Walk-ins are welcome at the bar whenever there is space. Come for cocktails and bar plates alone, or start here and move to a table when you are ready. The choice is yours.

An island bar should feel like the Caribbean in a glass — unhurried, generous, and built on good rum.

The bar sits a two-minute walk from the cruise terminal, on the George Town harbour. Pair a drink with the sunset, see the full menus, and reserve a table when you would like to stay for dinner.

Happy hour runs every day from 4 to 7pm, at the bar and in the lounge. It is the easy way to begin an evening on the waterfront.
Absolutely. Walk-ins are welcome at the bar and lounge whenever space allows. You are welcome to settle in for cocktails alone, or stay on for dinner.
Yes. A selection of bar plates and lighter dishes is available at the bar, alongside the full menu if you decide to make an evening of it.
We do. The bar makes thoughtful non-alcoholic cocktails and lighter, low-alcohol drinks, so everyone at the table is well looked after.
