Out in the open air
Tables set on the open-air terrace, the sky filling your whole view as the sun goes down over the water.
Sunset is George Town's daily event, and a dinner planned around it is one of the great simple pleasures of a Cayman trip. The capital faces west, straight out to open sea, with no headland in the way — just the harbour turning gold and then rose.
SeaRock was built to use that. The terrace and the window tables look directly into the sunset, and the kitchen knows how to pace an evening so the light show and the meal arrive together. Order a rum cocktail, settle in, and let the Caribbean do what it does best.
Wherever you choose to sit, SeaRock points you west toward the harbour.

Inside, the west-facing windows frame the sunset while candlelight takes over the table. The best of both.
Ease into the evening at the bar with a rum cocktail in hand, then move to your table as the light fades.
A sunset dinner is the easiest great evening to plan on Grand Cayman — it just takes a little timing. Here is how to get it right.
Sunset in Grand Cayman falls roughly between 5:30pm in midwinter and just after 7pm in midsummer. Reserve so you are seated about 30 to 45 minutes before, with a drink in hand before the sky begins to turn.
Our happy hour runs daily from 4 to 7pm. The perfect plan: arrive for the last of it, watch the sun go down over a cocktail, then slide into dinner as the candles take over and the harbour settles into dusk.
The terrace and the window tables look straight into the sunset. They are the most requested seats of the day, so note your preference when you book and arrive unhurried.
The sun sets over George Town every evening of the year. A table timed to it is the simplest luxury a Cayman trip offers.
SeaRock is a two-minute walk from the cruise terminal, right on the harbour. See why every table faces the water on our waterfront dining page, browse the menus, and reserve a sunset table.
“We booked the terrace for sunset and it was pure magic. The sky went from gold to pink while we ate. Easily the highlight of our trip.”
“There is no better sunset table in George Town. We are locals and still come back just for that hour.”
